The Guelph Food Research Centre of Agriculture and Agri-Food Canada offers opportunities to conduct research in a recently approved multi-disciplinary research network - Dietary Fibre and Hydrocolloids. Four post-doctoral candidates are sought to conduct studies in various areas including processing, physical chemical characterization of polysaccharides, examining the properties of dietary fibre that influence physiological effects and health benefits and developing methodologies and processes to incorporate polysaccharides/dietary fibre into food systems. Successful candidates will have the opportunity to interact with a wide range of collaborators from a number of universities and industry partners in Canada and abroad.
The candidate will develop processes for extracting, modifying or manufacturing dietary fibres from agriculture by-products; study fundamental physicochemical properties of polysaccharides and dietary fibre including chemical structure, conformation, aggregation and molecular weight, interactions with other food components, rheological properties, hydration and thermal properties; study the effect of incorporation of fibre on the texture and sensory attributes of baked food products. The candidate will also work closely with other researchers to investigate how these physical chemical properties are related to the physiological responses and health benefits.
A doctorate degree in Carbohydrate Chemistry/Physical Chemistry, Food or Cereal Science and Technology, Chemical or Agricultural Engineering is required for the candidate. Applicants must meet requirements for NSERC postdoctoral fellowships (http://www.nserc.ca.). Stipend starts from $43,000 per year (three years term upon satisfactory performance).
The Carbohydrate Laboratories at the Guelph Food Research Centre are well equipped and located on the University of Guelph Campus.The candidate will have access to the resources of the Research Branch of AAFC, with laboratories across the country, and to the University of Guelph.Guelph has a thriving and world recognized research community, especially in Agriculture and Food Sciences.In addition to the active cultural and recreational life possible in Guelph, there is access to the many facilities of Toronto and the adjacent tri-city of Kitchener/Waterloo/Cambridge.
